Travel Day

20141101_084159The boys and I love the adventure of traveling. Airports, airplanes, taxis, shuttle buses, we like them all. This trip we were lucky enough to fly our favorite airline, where every one has their own tv with satellite television, movies and games. You can’t argue with that!

Pumpkin Oatmeal Cookies

The weather is finally starting to feel like fall and we all seem to be in the mood for fall food.  One of the benefits of the changing seasons is seasonal food, and fall is one of my favorites.  It’s time for apple and pumpkin pie, squash and sweet potatoes and soups.

This weekend we kicked the season off with a Thanksgiving menu and a fun day with family.  We laughed and had a great time.  I’m so glad we all live in the same neighborhood!  We miss the rest of you who live farther away though.  We’ll do it again on actual Thanksgiving day with everyone.

The boys and I love pumpkin and this time of year we include it in everything.  Today I added it to my oatmeal cookies and it is a hit.  As a bonus, they make a great breakfast.  I just hope the boys don’t go to school and tell their teachers I let them have cookies for breakfast!  :)


Pumpkin Oatmeal Cookies


  • 1 stick of butter, softened
  • 1/2 cup canola oil
  • 1 cup firmly packed brown sugar
  • 1/4 cup sugar
  • 1/2 cup pumpkin
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp ginger
  • 3 cups oatmeal


  1. Preheat oven to 350 degrees.
  2. Combine the butter, sugar and oil. Add pumpkin, eggs and vanilla and mix well.
  3. Add dry ingredients and mix until combined.
  4. Bake for 10 - 12 minutes.

These cookies have more of a cake consistency than my regular oatmeal cookies.  We are loving them.  They probably won’t last long.  Hope you enjoy them too!

TrailBlazers and Milestones

This weekend was the final race for the TrailBlazers – the kids running club.  We had so much fun running this summer and I was really excited for the kids to get to do their thing.

It was a beautiful morning and a great course along the bay.

The kids all finished the 1 mile race and a few even completed their first 5k!  I am so proud of them.  One of my 5k finishers made this collage below.  I can’t even tell you how amazing it is to make even a little difference in a kid’s life.  It is the best feeling.

We had another really important event this weekend – my nephew’s 1st birthday party!  In typical first birthday fashion this little cutie decided to start his party with a nap.  Once he joined everyone though, he was the life of the party.  He is the sweetest little guy and he loves being with everyone.

Feeling Lucky

It was a lucky weekend for the boys and I!  Look what Dane won at Fantasy Island!

I usually talk the boys out of these machines because we almost always leave disappointed.  But Dane really wanted the Minecraft Ocelot – his favorite of all of the animals.  We couldn’t believe it when he won it on his second try!  Can you tell he was excited?

There is apparently a theme this year.  I have not seen giant sand sculptures in years and now they are all over.

The boys had a great time with their cousins.  They were good about going on rides together too.  We couldn’t believe it when all three of them squeezed into one bee though!

We got lucky at the kids running club this weekend too.  While we were running we found our mascot!  Hopefully it won’t be too fitting.  lol  The kids decided to call him Bob.

We had some of my favorites this weekend.  Carrot Ginger Soup is never a bad idea.


Sometimes you just have to make pancakes for dinner!  We love breakfast foods – just not in the morning.  These pancakes are so easy and it’s simple to change them up a bit too.  Usually we add pumpkin puree for pumpkin pancakes, but tonight we went with chocolate chips.



Easy Pancakes


  • 1 cup flour
  • 1/4 cup sugar
  • 1 tsp baking powder
  • dash of salt
  • large dash of cinnamon
  • large dash of nutmeg
  • 1 tsp vanilla extract
  • 1 egg
  • 1 cup milk
  • 2 tbsp. canola oil


  1. Mix all ingredients together until combined. If too thick (because of pumpkin puree, etc), add more milk.
  2. Cook in a pan over medium heat until bubbles form on the top of the pancakes. Flip the pancakes and cook for another minute or so.

Game Ball

We had a busy weekend with a bunch of highlights.  The most exciting part of it was Aidan’s baseball game.  The Bulls are either in first place or a half of a game away from first place.  (I should know this, I’m sure!)  Aidan caught a hard hit fly ball in right field and played a great game overall.  His team won 9-4 and he was given the game ball!  I’m so proud of my guy.

His team is on to the playoffs now.  Wish them luck!  Dane had a soccer game this weekend as well, but of course I can’t take any pictures while coaching.  Dane played really well and I am proud of him too!

We tried a new restaurant with friends after the game.  It has a tropical theme and the best frozen drinks!  The boys were so happy to hang out with their friends they didn’t even mind being at a restaurant!  Loren and I decided we are definitely coming back without kids sometime soon.

Today the cousins got together for a picnic lunch and playground fun.  They are so cute together.  Can you guess who makes all of the decisions in this group?  Yup – the little one.


He decided the boys were going to put on an impromptu play for us.  We were entertained with tropical music and a story about bees pooping on people!  For the finale, the littlest guy decided to make an appearance.  Too cute!


That’s it.  Except I found a new version of vitamin water on the way to the playground today.  Sparkling vitamin water in my favorite flavor of all time – black raspberry.  😉  Life is good.
